In 1927 the founder of Bodegas Celaya , Mr. Florindo Celaya Aranda began producing wine using the traditional methods of those days . This knowledge together with continuous production improvement has been passed down from generation to generation until present day Bodegas Celaya is family – owned and is located at the outskirt of La Roda , Castilla La Mancha , Spain . La Roda is a village between Madrid and Alicante where vines were planted as far back as the 12thcentury and it also forms part of the ” Don Quixote de La Mancha route described in the most famous book by Miguel Cervantes . All grapes are grown within Bodegas Celaya so that eachstage of pruning , growth , ripeness and harvesting are controlled meticulously . After the harvesting , traditional method & modern technology are combined to produce the best price – qual ity wine in a bottle . Each bottle represents a part of the story of Don Quixote de La Mancha .

Tasting Note :
Yellow green colour with shiny tones . Clean and floral aromas , Balanced grape fruit and apples wine with medium body . Agreeable to the palate . The vineyards are at 800 meters above sea level , with a very cold winter and dry summer , warm by day and fresh at night , therefore the grapes mature very slowly . The grapes are whole bunched pressed .
Food Pairing : Suitable to drink with dim sum , starters and fish dishes .
